Bottling a Chocolate Stout Beer


Making wine and bottling beer.  That is what is currently going on at my house.  The hubs is making a white and a red wine (see the pics of wine in progress). 

My amazing daughter is making a Chocolate Stout, one of her favorite kinds to order, and the first beer she has made.  She did use a simple Stout kit and added chocolate.  I can't wait to see how it turns out.  Today is bottling day.

Green Chili - Chilie Enchiladas - New Mexico Style -- Huevos Rancheros

Yes, I have said it 100 times.  I can't cook.  But I can prepare.  Do they make a heat and prepare book?
 
I love a Green Chili Enchilada Casserole.
 
Best part about this meal.  Leftovers.  Using as a dinner and again as a breakfast with a fried egg on top for Huevos Rancheros.
 
I use a pyrex and build from the bottom up.
 
I use 2 jars of just any kind of enchilada sauce you like.  Here in New Mexico, I go with either red chili or green chili.  I add 1-2 tablespoons of honey in each jar and shake well.  The honey gives a slight sweet taste and takes the acid out.  I also add a touch of garlic powder and pinch of pepper.
 
Lightly oil the pyrex. 
Put a small amount of chili on bottom.
Then layer the tortillas.
 
 

I break them and fill the casserole with them.  I do three layers, with cheese and a little drizzle of sauce.
 Cheese on top, cover with foil and bake 30 minutes to an hour at 400 degrees. 
 
I then take the top off and bake for a few minutes to brown the cheese a little.
 
 

Enjoy.  Seriously, these are best after they have set for 20 minutes and allowed to firm like a lasagna.  Like a lasagna they are even better the next day.

How do you Nacho? Tostitos Scoops Nachos

How do you Nacho?  Nachos are a favorite food of mine.  I just can't get enough of them.

The other day while working on jewelry, I decided to break for lunch.  Nachos to the rescue.

I love the individual Tostitos Scoops.  They make little mini Tostada Cups (New Mexican Phrase).
Some of the New Mexican Restaurants in the Southwest, serve Tostadas and they aren't flat, but
like individual cups.  That is why these Tostitos Scoops are so fun.  You can fill them with anything,
chicken, beans, beef, carne adovada, anything.

Top them your way.  Enjoy.

I really can't cook.  I can just heat and eat.

S'mores Yogurt -- Easy DIY

Truth is I loved the Dairy Queen S'mores Blizzard.  It was the August flavor of the month.  I just wasn't crazy about the sugar and calories. 
 
Here is an easy DIY -- use any yogurt you like. 
 
Vanilla yogurt, graham crackers or bears, and some chocolate chips, dark or milk your choice, and a few small marshmallows if you have them or marshmallow cream.
 
 Enjoy.  I skipped the marshmallows this time.
