Klaus the Morkie....Looking for his Friends...

Klaus likes to look thru the fence for his dog friends......the next door neighbor dogs. 
The bamboo fence on the chain link adds a  bit of separation for safety. 
Sorry for the blurry iphone pic.  But tooooooo cute to pass up.
Love this dog. 

     
Oh, and when he sees them, he barks, wags his tail, and jumps sideways.
Happy happy joy joy.  (Do you know where that is from).  Hehe.

Sadly it is the last day of July.  When I was taking this pic, it was quickly getting darker.
Does summer have to come to an end?

Pasta Pesto with Garden Veggies

How do you pasta?

It is summer time and there are tons of fresh veggies.  I went with sauteed zucchini and squash with
bow tie pasta with pesto on the side.

Vegetarian works for me.


        

Seriously, I can't cook.
I can prepare.
Now for some jewelry making.

Zucchini with Alfredo Sauce

How do you eat your veggies?  


Is your garden over run with zucchini?
Are you looking for a different way to serve it?

Easy, Zucchini with Alfredo Sauce.  Semi Paleo - depending on your amount of Alfredo Sauce.

Wash zucchini. 
Peel off skin. 
Simply use vegetable peeler to make strips. No fancy vegetable peeler needed. 
Pop in flat skillet with a touch of butter 
Sauté. 
Add Alfredo Sauce of choice and heat. 
Add chicken for your protein lovers. 
Enjoy.

Summa -- Summer Time Reading


What is on your nightstand?  My Kindle
What is in your purse?  My Phone
Where/how do you read?  On my Kindle, and on my Phone when waiting in line.

Physical Books?  Not much anymore, but my daughter is an avid physical book only reader.
Kindle?  Yep, a Kindle Keyboard -- Love it.
Nook? Nope.
Ipad?  The Hubs loves his.
Phone?  Yep, when waiting in line.

Do you still visit the Library?

I have to admit, I had a "You've Got Mail" moment the other day.  I had visited my Library's online area and hit "Hold" on several books for my Kindle -- the Kindle Keyboard LOVE IT!  My "You've Got Mail" moment was when I got mail from my library and didn't know which of the Holds it was.

It was Lis Whiel "Snapshot".  Very excited to read it, and the fun of the whole, which book was it, was great as well.  The Kindle made it simple, simply checked out and download through Amazon, (thank you Amazon for making it so easy all over wifi).

I also love that what the Hubs reads, I can share.

So, what/how when do you read.


Klaus - the Morkie.... Not reading, but looking good.   He likes reading best when his owners are reading on the patio and he can bark at the neighbor dogs, and chase birds, squirrels, and rabbits.

Blackeyed Pea Squash Cassarole

We no longer have a Blackeyed Pea Restaurant in our town. 

Luckily I found the squash recipe online at food.com. 

It was perfect.  Easy to do.  And best of all it made use of our garden squash. In addition it was one of the things I used to order when we had the restaurant in our town, they had a 3 vegetable plate I loved. 

Like I always say. I can't cook, but I can prepare.

Freezing Fruit



I know Home-ec isn't really taught anymore.  It wasn't really taught when I was in school either. 

So here is a quick home-ec lesson.  

Strawberries and Cherries freeze great. 

Our cherry tree put off a ton of cherries. Some we ate, made a couple of pies, gave tons away and had leftovers. 

We washed, pitted and froze for later. 

Now it is strawberry season.  

New batch ready to pick. 

Some to eat, to share, to freeze. 

Wash, dry, remove stems, freeze. 

Fresh smoothies here we come. 

If you are at the Farmer's Market and there are some great deals on fruit and you just don't eat it all.  Think freeze.

Easy Greek Salad -- Summer Bounty

I am all about easy. 
 
This great salad, uses Summer as its cue.
 
Cucumbers, olives, tomatoes, cheese (mozzrella, string, cheddar, whatever you have), top with a hint of Greek Dressing, and you are good to go.
 
Add ins:
Croutons
Pasta
Garbanzo Beans
Zucchini
Squash
Chicken
Beef
Fish
Cooks choice.
 
This is a great take anywhere dish.  Great for when it is too hot outside to cook.
 
I can't cook, I just prepare.

Bisquick Easy Quiche a/k/a Bisquick Impossible Quiche


I can't cook.  I can prepare.  This is one of my new go-to favorites.
Seriously, breakfast, lunch, dinner, leftovers.  It is great.
It is the Bisquick Impossible Quiche.

Makes its own crust.  It is amazing.
Put anything in it you want.  Recipe below.

I do have to preface this with I made it a few times, and didn't follow the directions, you must,
put the veggies, etc. on the bottom and follow the directions, then it makes its own crust.

Bisquick Impossible Quiche
1 Cup Bisquick
2 Cups Milk (I use Almond Milk)
Salt/Pepper to taste - I use a Pinch.
I also use a Pinch of Mrs. Dash.
4 Large Eggs.
1 Cup of Swiss Cheese - or any kind of Cheese (I use mixed Colby Jack).
Now for your personal touch.
1/2 Cup Broccoli or any veggie. (I used small chopped fresh broccoli).
Spinach is great too.  If you use spinach, (frozen spinach) heat in microwave and then
be sure and drain - get water out.
Bacon - Ham - Turkey - Chicken (if you want).
The one above is broccoli only.
A little cooked onion is great too.

Directions:
Preheat oven to 400 degrees.
Grease an 8" or  9" square Pyrex. (Size of Pyrex will also increase/decrease cooking time).
Sprinkle the broccoli (any veggie)  any protein (if you want) and cheese
over the bottom of the Pyrex.
Beat eggs in a bowl (I use a whisk).
Beat in the milk.
Add Bisquick and beat until smooth.  (Get most of the lumps out - I never get all of them out).
Now the magic.
Pour over the ingredients in the Pyrex.

Bake for 35 minutes or until a toothpick comes out clean.
I tend to over bake, as I don't like runny eggs.
Let sit - cool in pan for 15 minutes.

Cut and enjoy.

Best part, it is amazing, heated in the microwave for breakfast/lunch/dinner, any other
day of the week.

This will become a staple in your home.

Great with salsa on the side.  Add a salad, or additional veggies for a lunch or dinner meal.
Just simple sliced tomatoes, and mozzarella.
Pack this baby up and take to work for a reheated lunch.

Don't worry about cooking, try preparing.
